PEA, PEAR & WATERCRESS SOUP



This recipe is perfect for warding off any germs. Watercress is practically a cure all! It's so good for you. It's loaded with vitamins & minerals and gram for gram it has more calcium than milk, more Iron than spinach and more vitamin c than oranges.
Watercress is quite bitter, so I've balanced that with the sweetness of frozen peas and...…...pear. Yes, you read that correctly. I know it might sound a bit odd, but give it a go!
Easiest soup ever - No actual cooking required & minimum effort involved.

For the soup     2 - 3 servings.

125g flesh of a pear
200g frozen peas
60g fresh watercress
300ml vegetable stock
Salt & pepper to taste. 
cream or soy cream to serve

1. Weight out 200g of frozen peas and leave to thaw at room temperature.
2. Once defrosted Place in the blender with all the other ingredients & blitz to a smooth consistency.
3. Season to taste.
4. Heat up in a saucepan before serving.
5. Drizzle with cream or soy cream (optional.)
