STICKY GINGER LOAF CAKE


The idea for this recipe was inspired by my pregnant friend's morning sickness. All she could face eating was ginger biscuits, but she started to get bored of them so I made her a ginger cake. You don't need to be pregnant or feeling nauseous to eat or enjoy this cake!

150 g Doves farm gluten free self raising flour or similar
125 g sunflower spread
3 eggs
50 g caster sugar
1 tablespoon molasses
50 g golden syrup 
4 teaspoons ginger powder
1 teaspoon baking powder

preheat the oven to 180 c

1 Grease a small loaf tin (with light olive oil or butter) or line it with grease proof/ baking paper.

2 Beat the eggs together in a large bowl. Stir in the molasses & golden syrup so that it's all well combined.

3 Mix in the sugar, flour, baking powder and ginger. Mix in the sunflower spread.

4 Pour the mixture into the loaf tin & bake in the centre of the oven for approx. 45 mins. The top of the cake should be firm to the touch and if you're not sure, a skewer poked into the middle of the cake should come out clean. turn out of the tin & leave to cool.......or eat whilst still warm!
