My Grandma suggested I bake a tea loaf to but to be honest I had to google it! Pretty sure I've not had one before. Anyway here is the finished result - Perfect for afternoon tea. Easy to make and will keep for a good few days (although this one was devoured almost as soon as I'd taken the photo!). Vanilla Chai tea worked well here, but you could use any tea you like.
1 cup soft brown unrefined sugar
1 cup dried fruit (I used apricots & sultanas)
1/2 cup chopped pecans or walnuts
2 eggs
2 tablespoons light olive oil or rapeseed oil
1 teaspoon baking powder
1 cup milk (I used almond milk)
1 Vanilla chai tea bag
1. Warm the milk, drop the teabag into the milk & leave for a few minutes for the flavour to infuse. Remove & discard the teabag once infused.
2. Preheat the oven to 180 c
3. Grease a small loaf tin, or line it with grease proof paper.
4. Mix all the dry ingredients together in a bowl. Then add the eggs, oil & the milk and mix everything together well.
5. Pour into the loaf tin & bake for about 45 minutes until firm to the touch & turning golden brown.
6. Turn out on to a cooling rack & leave to cool before slicing.
delicious on its own..............better with butter............and a cup of tea......……
