OLD FASHIONED AVO TOAST & ACAI BOWL.


This is a sad post to write, because my beautiful Grandma died two weeks ago. She was 91 and the biggest fan of the blog. She read every single post, and tried a lot of the recipes featured here.
Whilst going through her things, my Mum & Sister found an old cookery book of hers and there was a recipe for Avocado toast! - There was also a recipe for a "Cherry Bakewell Mousse" - which is not far removed from an Acai bowl.  So, in honour of Rabbit Food's number one fan, I've recreated these recipes for you. (You'll be glad to know I have no intention of re creating some of the more unusual recipes such as " rabbit in jelly" which sounds like cat food !).

 
First up the Avocado toast.


1 Avocado
juice of 1/2 small lemon
1 tablespoon mayonnaise  (I used veganaise)
2- 3 spring onions (white bits only)
salt & pepper to taste.
(I also added some fresh coriander as shown below)

Toast your bread.
2 Meanwhile  blend together the avocado, onion, lemon juice & mayo.  Spread on the toast & serve!
(if you don't want such a smooth texture, mash together by hand)


CHERRY BAKEWELL ACAI BOWL

Serves 2
200g fresh cherries (stones removed)
2 tablespoons almond butter
1 teaspoon vanilla powder
1 teaspoon Acai powder (I love urban Acai sachets - you can get them from Holland and Barrett in the UK)
A little almond milk to get the desired consistency.

blitz together in your blender ( I used a stick blender).  decorate with some finely chopped almonds, and I also added some cocoa powder......just cos.


    I dedicate this post to my Grandma, who will remain in my thoughts & my heart forever.
