Christmas is nearly upon us! - & most people seem to be running round like crazy trying to get everything done before the big day. To all those of you feeling stressed, I highly recommend Australian Bushflower essence Calm & Clear  -it's amazing! There's still time to get some for Christmas (www.revital.co.uk if you're in the UK) It's great to have in the cupboard for any stressful period........  or just take Kanga's advice and relax........

So this recipe is a great way to use up any cooked carrots you have left over from Christmas lunch. (carrots & sprouts are always leftover in our house....never the roast potatoes...........)
If you've cooked Christmas lunch for the whole family, probably the last thing you will want to do is start whizzing up your own houmous on boxing day, ( but if you're so inclined, by all means go ahead......) I used Amvrosia Organic houmous here, but any brand will do.
I actually think I prefer this to regular houmous & it's a great way to make a pot go further, especially if you have friends over for xmas drinks & are making dips.

150g left over cooked carrots
large handful fresh coriander
juice of 1 clementine
150g pot of houmous

1 juice the clementine by hand.

2 Put all the ingredients into your blender (or use a stick blender) & blitz.
3 eat....... with anything & everything. Crisps, toast, .......leftover sprouts (?)
