The sugar free walnut cookie recipe is by far the most popular on the blog, so I thought I'd rehash it a bit for Christmas time! The cookie recipe is sugar free, but if you ice the cookies (as I've done) or add the little sugar ball decorations then they will no longer be sugar free! - So you can decorate them with raisons, dried cranberries, nuts or seeds instead if prefer.
Making these will really get you in the Christmas spirit! They smell amazing.

100g gluten free plain flour  (I use doves farm plain GF or rice flour)
50g pecan nuts
3 tablespoons light olive oil
3 tablespoons date syrup
teaspoon finely grated peel from an organic orange (or clementine)
teaspoon mixed spice

preheat the oven to 200c

bliz the pecans in your blender with the flour.when  Add the other ingredients and blitz together until the mix comes together into a ball of dough.
roll the dough out onto a sheet of baking paper. (you want the cookie dough around 6 mm thick)
cut into shapes. if you want to hang them up, then using a skewer (actually I used the pointy end of a chopstick) make a hole in the top (as shown below) bake in the oven for about 10-12 mins (until starting to brown). At this point I pressed some little gold cake decorations into the stars (optional). if you have coeliac disease please be careful to check any cake decorations you use as not all are suitable.
I also made a few with glace cherries pressed onto them (see further down the page)

Transfer the baking paper to a baking tray, and place in the centre of the oven for about 13 mins, or until starting to brown. They will firm up as they cool, so don't panic that they still seem soft when they come out of the oven. Whilst they are still soft you may want to carefully reinforce the holes you made (mine closed up a little whilst cooking, so I just used the chopstick again)

leave to cool.  Decorate any way you like!

just to prove you can hang them on the tree if you want!  however with these two troublemakers looking for any opportunity, hanging food up around the house aint gonna happen!
