preheat the oven to 200c/ 400f/ gas mark 6
100g doves farm gluten free self raising flour
3 tablespoons walnut oil
4 tablespoons maple syrup (or honey)
1 put the walnuts in a blender and blitz down to a crumb consitancy. Add the other ingredients and you should get a ball of cookie dough.
2 roll out to about 1cm thick and cut into rounds. (I made 10 cookies, but it depends on the size cutter you use how many you'll get )
3 bake in the preheated oven for about 13 mins until they are firm and have started to brown.
They will harden as they cool. Not sure how long they can be stored for as they've never lasted more than a day in this house ! :)
