STICKY TOFFEE DATE CAKE


Sticky toffee date cake is the perfect mother's day treat. This one was devoured in minutes ! (not all by my mum, I hasten to add)   Happy mother's day to my mum, my gran and all the other Mum's out there!
 
75g dates
150g doves farm self raising flour
150g spread (I use lurpak olive.)
100g soft brown sugar
1 tablespoon golden syrup
3 eggs
1 teaspoon doves farm baking powder
50g chopped walnuts or pecans
ICING
100g butter
200g soft brown sugar
175 icing sugar
3 tablespoons milk/soymilk

1  Soak the dates in a cup of boiling water, whilst you prepare the rest of the ingredients to soften them a bit. preheat the oven to 180.
2  Put the walnuts to one side and put all the rest of the ingredients in a blender & blitz. (You can also just mix everything together by hand ). Once the batter is mixed together, add in the chopped walnuts, drain and chop up the dates & add them too
3  grease or line a  inch cake tin & pour the cake mix into the tin.
4  bake in the centre of the oven for around 40 mins. (all ovens are a bit different, so keep an eye on the cake. you want the top to be turning golden brown and the cake to be firm & springy to the touch. another way of testing is to poke a skewer through the centre and if it comes out clean, the cake is cooked, if it comes out with uncooked batter on it, then it needs a bit longer.
5 remove from tin & leave to cool (wire cooling rack is perfect if you have one)
6 to make the icing  melt the butter in a saucepan. add the brown sugar and bring to the boil, stirring all the time. boil for 2 mins, constantly stirring, then remove from the heat & add the milk (keep stirring!!!)
return to the heat & bring to the boil again (yes still strirring), then remove from heat. transfer to a heat proof bowl/ dish & leave to cool. (probably take about 20mins). then beat in the icing sugar, until you have a nice smooth icing ready to go onto the cake. I decorated this one with dr oetker shimmer pearls & some walnut halves. please check your decorations are GF as many are not suitable for a coeliac diet.
