Made this today for my sister's birthday. It was a huge hit with everyone & no one realised it was gluten free!;) Happy birthday Jodie! xxx
150g grated carrots
1 small orange, peeled with the seeds removed
175g doves farm self raising flour
125g soft brown sugar (I had run out of this, so used plain caster sugar today) you can also use coconut sugar for a healthier option)
100g unsalted butter
1 teaspoon doves farm baking powder
large handful of raisons
1 level teaspoon mixed spice/ or just cinnamon
4oz unsalted butter
6oz icing sugar (make sure the brand you use is gluten free)
juice of 1/2 orange
1 preheat the oven to 180
2 blitz all the ingredients together in a blender (APART FROM THE RAISONS......wouldn't be the first time I've made that mistake..........)
3 if you have used an organic orange you can add some orange zest from the peel. add the raisons and mix in well. (you could also add walnuts, pecans or dried apricots if you have any)
4 pour into a cake tin. I used a inch loose bottomed 8 Inch/ 20cm tin. (you can lightly grease your tin or line with baking paper as I usually do, but today I didn't have any, so I lined it with some foil. this is optional, but I just find it the easiest way to get the cake out cleanly.)
5 bake for around 40 mins until the top is firm to the touch and a skewer poked in the middle comes out clean.
6 remove from tin and leave to cool, when cool to touch you can ice it.
NOTE. I decorated this cake with Dr oetker gold shimmer pearls. They have no gluten containing ingredients at this time. Please make sure you check when using cake decorations. many cake decorations are not suitable for GF diets. if you are unsure, a) leave them out b) contact the manufacturer direct or c) if you are in the uk contact coeliac uk for product advice. they have a food & drink directory which can be very helpful, but they will also give you individual product advice if you give them a call. www.coeliac.org.uk
if you want to make this cake DAIRY FREE, just use sunflower spread in place of the butter and for the icing, just use plain icing sugar & mix with orange juice. the cake below is the dairy free option!
