APPLE & WALNUT BREAKFAST MUFFINS



These are a really tasty way to start the day. lots of  nutritious ingredients & half the sugar you'd get in most shop bought muffins.
you can change the recipe to use up whatever you have in the cupboard, by using different kinds of nuts, seeds or dried fruit. The only limit is your imagination!


makes 6 muffins

150g doves farm self raising flour
50g light olive oil
1x 75g carrot finely grated
100g apple sauce/puree (you can make this yourself or use a jar of apple baby food or clearspring do some great fruit purees)
75g soft brown sugar/ or coconut sugar or another sugar replacement
1 large handful sultanas
1 tablespoon sunflower seeds
2 large handfuls walnuts
level teaspoon cinnamon (optional)
3 eggs
1 level tea baking powder (I used doves farm. )

preheat the oven to 180

1  grate the carrot.
2  simply put all the ingredients (except the sunflower seeds, walnuts, carrot & raisons) into a big mixing bowl and mix together until you have a nice smooth batter.
3 add in the carrot, walnuts & raisons
4 pour into muffin cases and bake for around 20-25 mins until firm, but springy to the touch.
